Description
Roasting “under the bell”, originally called “ispod peke”, is a popular traditional way of preparing all kinds of dishes in Croatia.
It half-cooks and half-roasts the meat in the wrought-iron cooking vessel under the open fire that makes it juicy and tender and easily separated from the bone. If that doesn’t make your mouth water, it is also accompanied by potatoes and vegetables that cook in the meat juices, which gives them a distinct flavour.
